Hello, is there already a sort a consensus on what would be the best route on this type of build ? The crit one (with SI, critical power, Recklessness, Scrutinous and high perception) or the survival one (lower per for con/will and surviving feats instead)?
The crit one will ALWAYS do more damage but has 0 survivability(aka savescum build) and on Domination difficulty is really hard to not have your core damaging ability maxed out(enemy's evasion/dodge is a b8), so there is no "Reduce your Per so you can have Con" kinda of build.
WHOEVER, Brute Aim(+3 to Per) does open some doors, if you want to use it.

Forget it my forget it.

There are some NPCs, like Archie from Junkyard or most of the Protectorate from Abram's Junkyard quest that just doesn't trigger hit and run when killed with a grenade launcher.
There are also some npcs where this bug is a bit inconsistent but can happen.
I have also noticed that range can also influence in some cases if it is going to trigger hit and run or not.

Oh it's a speedhack bug, when you go over 4x game speed, hit and run for grenade launcher stop working.

So yeah, forget I said anything.

At least my refurbished thumper is not triggering it.
My armor penalty is 15% and my total mp is 60, so it should give all 25 mp, exactly like when I use any other weapon.

I think grenade launchers or at least refurbished thumper is coded as a normal grenade for Hit and Run.

So, I've been a bit indecisive about which builds I'd like to do a full playthrough with, but are there some decent and comprehensive unarmed/fist weapon builds worth trying? Maybe something tanky and involving Persuasion?
Unarmed and fist weapons require a bit more effort to make a build than your standard melee build. I would post a link with a build i played on hard some time ago, but for some reason I'm not allowed to post external links.

But being honest to you, just go and play, try not to worry too much.
Strong builds are only necessary on Domination.

i was thinking at picking probably nimble or armor sloping, tho i've made the math and the former is a bit better than the latter;
Why not both?
What it looks like you are already suffering from lack of movement speed(normal melee jugg problem), just use both.
Body Weight Training could also be another good addition.

Movement speed is always gold on melee builds.

Are you using Spear, Metathermics or Shotguns as your main damage?
Overall your build seens very confusing and lacks focus.
