Hello.
I am wondering why organs (specially hearts) weight so much when compared to other things.
Thoughts?

2 reasons:
1) to encourage rising Biology.
2) as a message that you shouldn't pick every loot possible. Their price is pretty low. There's even an NPC in certain big city who has problems selling his organs (no pun intended) and is heavily encumbered.

Yes, issues arise when you are a compulsive hoarder. :P

I decided to sacrifice Biology (along with other skills I'd rather want if it were casual RPG ;-) ) so I just ignore all those organs. There is no way you could possibly loot every corpse in this game, unless you avoid most combat by means of stealth.

I feel organs and fish are heavy because it is difficult to stack them.
Ammo and medicines(barring bandages) can all be stored in boxes and are easily stackable.
Just imagining trying to stack slimy fish or the bloody entrails of animals in a bag or backpack.
That's why the humours extracted is much smaller. Vials and petri dishes are much easier to store and stack.
